For those of us who appreciate a tasty piece of chicken, pork or beef but tend to steer clear of them because of what we know about the traditional meat industry, there’s always an alternative. For me, it usually means getting protein from non-meat sources. The problem is, I really like pork. A lot. What’s a conscientious meat-lover to do?
For those of us who would love to enjoy the occasional rack o’ ribs or pile of drummies, there’s a small, family owned farm that raises chickens, cows, and pigs without the use of chemicals or antibiotics, and it’s called Hidden Stream Farm. They raise their animals using a grass-based system in Elgin, and here’s the best part: you can see it all in action. The dinner on the farm next weekend on August 12th is a great opportunity to see the farm. Restaurant Alma’s chef will be there as well, so that’s when I’ll be making my visit.
